Baked Potato Salad

 

Yield: 3 cups

Timing: 90 minutes, including 1 hour to bake potatoes

Hardware:  Oven, medium stainless steel or glass bowl, cutting board, spatula, chef’s knife, paring knife, large spoon, tasting spoons, measuring spoons

 

Ingredients:

2 russet potatoes

¼ cup bacon, coarsely chopped

2 tbsp. flat leaf parsley, finely diced

2 tbsp. fresh chives, finely minced

¾ cup sour cream (or more to adjust consistency)

¼ cup sharp cheddar cheese, shredded

1 tsp. kosher salt (or more to adjust to taste)

½ tsp. ground black pepper, (or more to adjust to taste)

 

Method of Preparation:

·      Preheat oven to 375ºF. Scrub potatoes.  Bake in oven until tender when pierced with paring knife (45 minutes to 1 hour, depending on size). 

·      Meanwhile, wash and prepare knife cuts for bacon and herbs.

·      Cook bacon in a skillet on medium heat, drain extra grease onto a paper towel.

·      Put aside 1 tbsp of chives for garnish.

·      When potatoes are done, cool to room temperature or chill until ready to use.

·      Peel potato skins off.  Dice potatoes into ½-inch pieces.  Place in medium-sized bowl.

·      Add other vegetables to potatoes.

·      Add mayonnaise, bacon, cheddar, herbs and spices to potatoes. 

·      Mix well. Adjust seasonings to taste.

·      Serve chilled.

·      Potato Salad can be kept in an airtight container in the refrigerator for 5-7 days.
